Shchi - Russian cabbage soup
Shchi is one of the oldest Russian soups with a history spanning over a thousand years. The base is cabbage (fresh or sauerkraut) in a meat broth with potatoes and vegetables.
The sauerkraut version is more popular in winter, while the summer one made from fresh cabbage is lighter. It is served with sour cream and dark bread. A proverb says that shchi and kasha are the foundation of Russian life.
