Sauerbraten - marinated German beef

Sauerbraten is a signature dish of German cuisine. Beef is marinated for 3 to 7 days in vinegar, wine, onion and spices such as cloves and juniper. The marinade tenderises the meat and imparts a unique flavour.

The sauce is traditionally thickened with gingerbread or raisins, giving it a sweet-and-sour character. It is served with potato dumplings and red cabbage.
