Samosa, Indian stuffed pastry

Samosa is one of the most popular Indian street foods. Crispy triangular pastries made from thin dough are filled with a mixture of spiced potatoes, peas, onion and spices, then deep-fried in hot oil.

Samosa originates from the Middle East and arrived in India during the Mughal era. Today it is served with mint and tamarind chutney. Meat varieties also exist. Samosas with chai tea are a beloved ritual across India.
