Salmorejo - creamy cold soup from Cordoba

Salmorejo is a cold soup from Cordoba in Andalusia. Unlike gazpacho, it is thicker and creamier because it is thickened with stale white bread and a generous amount of olive oil.

It is made only from tomatoes, bread, garlic, oil, and vinegar. It is served chilled, garnished with boiled egg and jamón serrano. Salmorejo is simpler than gazpacho, but thanks to the bread it is more filling and silky smooth.
