Rogan Josh, Kashmiri braised lamb
Rogan josh is one of the most celebrated dishes of Kashmiri cuisine. Lamb is slowly braised in a rich red sauce of yoghurt, dried chillies, ginger and spices including fennel, cardamom and cinnamon.
The name comes from Persian, rogan means oil and josh means passion. The Kashmiri version is milder and uses ratanjot for colour, while the Punjabi version is spicier. It is served with basmati rice or naan bread.
