Rocoto Relleno - stuffed Peruvian pepper
Rocoto Relleno is a traditional dish from Arequipa. The hot rocoto pepper is filled with ground meat, onion, olives and egg. Queso fresco cheese is added on top and it is baked in the oven.
Rocoto is very spicy, so before stuffing it is soaked in salt water. It is served with pastel de papa, a potato gratin. It is a signature dish of Arequipa cuisine.
