Rinderroulade - German beef roulade

Rinderroulade is a festive dish. A thin beef slice is spread with mustard, filled with bacon, onion and gherkin, rolled up and slowly braised in a rich stock.

The braising produces an excellent dark gravy. Rinderrouladen are a typical Sunday lunch in German families, served with potato dumplings and red cabbage.
