Ravioli, stuffed pasta

Ravioli are one of the most popular types of Italian stuffed pasta. Two sheets of egg dough enclose a filling of ricotta, Parmesan, spinach, meat, or mushrooms, shaped into characteristic squares.

Ravioli originate from Liguria and the first records date to the 14th century. Every Italian region has its own version. They are served with sage butter, tomato sauce, or in ragù. Making homemade ravioli is time-consuming but well worth the effort.
