Ratatouille, Provençal Vegetable Stew
Ratatouille is a traditional vegetable dish from Provence. It combines aubergine, courgette, peppers, tomatoes, onion and garlic with Provençal herbs such as thyme, rosemary and basil. Each vegetable should ideally be prepared separately.
The name comes from the Occitan word ratatolha meaning mixed stew. Originally a peasant dish, today ratatouille is known worldwide. It is served warm or cold as a main course or side dish.
