Quesadilla is a simple Mexican dish. A tortilla is filled with melted cheese and other ingredients such as chicken, mushrooms or beans. It is folded in half and toasted on a pan until crispy.
The name comes from the Spanish word queso (cheese). In the north, wheat tortillas are used, while in Mexico City corn ones are preferred. It is served with guacamole, salsa and sour cream.
