Puri, Indian puffed flatbread

Puri is a traditional Indian flatbread made from wholemeal wheat flour, deep-fried in hot oil. When prepared correctly the dough instantly puffs up in the oil into a golden ball that is crispy on the outside and hollow inside.

The key is the right oil temperature and evenly rolled dough. Puri is traditionally served with chole (chickpea curry) or potato curry. In India it is a popular breakfast and a dish for religious festivals.
