Phở - Vietnam's national soup
Phở is the national dish of Vietnam and one of the most famous soups in the world. A clear broth is simmered for many hours from beef bones with star anise, cinnamon, and ginger. Flat rice noodles are added.
The most common varieties are phở bò (beef) and phở gà (chicken). The soup is accompanied by herbs, bean sprouts, chili, and lime. Phở is traditionally a breakfast dish in Vietnam. The Hanoi version is cleaner, the Saigon version richer.
