Patatas bravas - fried potatoes with brava sauce

Patatas bravas are one of the most popular tapas in Spain. Potatoes are cut into chunky pieces, fried in oil until golden, and served with a spicy tomato sauce called salsa brava.

The sauce is made from tomatoes, paprika, and chilli. Many bars also add alioli, a garlic mayonnaise cream. Every bar has its own bravas recipe, and their quality is the measure of a good tapas restaurant.
