Panang Curry - Thick Thai Curry with Peanuts

Panang Curry is one of the mildest Thai curries. It is thicker than red or green curry because it uses less coconut milk and more curry paste with added peanuts.

Finely sliced kaffir lime leaves are a defining feature. The panang paste contains roasted peanuts, which give a nutty richness. It is served with rice alongside chicken or beef.
