Paella - Spanish rice dish from Valencia

Paella is the most famous Spanish dish, originating from the Valencia region. It is prepared in a special wide pan called a paellera. The rice is cooked in broth with saffron, which gives it a golden colour and aroma.

The original Valencian paella contains rabbit, chicken, and beans. Coastal paella de mariscos uses seafood. The key is the socarrat, the crispy layer of rice on the bottom of the pan, a hallmark of a perfect paella.
