Pad Thai - Thai Stir-Fried Rice Noodles

Pad Thai is Thailand's national dish. Flat rice noodles are stir-fried in a wok with egg, tofu, dried prawns and bean sprouts. They are seasoned with tamarind paste, fish sauce and palm sugar.

The finished Pad Thai is sprinkled with crushed peanuts and garnished with lime and coriander. The dish balances the four flavours of Thai cuisine: sweet, sour, salty and spicy. It rose to popularity in the 1940s.
