Nem rán - Vietnamese fried spring rolls
Nem rán are traditional fried spring rolls, the best-known Vietnamese dish in the world. The filling is made from minced pork, shrimp, glass noodles, carrots, and black mushrooms.
The mixture is wrapped in rice paper and deep-fried until golden. They are served wrapped in lettuce with herbs and dipped in sweet-and-sour fish sauce. In the north they are called nem rán, in the south chả giò.
