Mujadara - Lentils and Rice

Mujadara is a dish of lentils and rice crowned with crispy caramelised onions. Despite being an inexpensive meal, its flavour is surprisingly rich thanks to the sweetness of the onions and the earthiness of the lentils.

It has a thousand-year history. In Lebanon they say that the mujadara of the poor is better than the meat of the rich. Served with yogurt, it is naturally vegan.
