Mole is one of the most complex sauces in the world. It includes various types of dried chillies, spices, nuts and dark chocolate. Cooking takes several hours.
The most famous is mole poblano from Puebla, served with turkey. There are over 200 variants, including green mole verde and black mole negro from Oaxaca. Mole is served at festive occasions.
