Milt refers to male reproductive glands of fish with a creamy white colour and delicate pudding-like texture. In Central Europe, most often prepared from carp, breaded and fried. In French cuisine served on toast as laitance, in Japanese as shirako. Rich in protein and omega-3 fatty acids.
