Mapo Tofu, Spicy Tofu from Sichuan

Mapo tofu is an iconic dish of Sichuan cuisine that combines delicate silken tofu with a bold spicy sauce. The base is fermented bean paste doubanjiang, ground pork, Sichuan peppercorns, and chilli oil.

The recipe dates from the 19th century and is named after Mrs. Chen. Authentic mapo tofu should have seven key qualities: spicy, aromatic, hot, soft, crispy, fresh, and tender. There is also a popular vegetarian version.
