Lomo Saltado - Peruvian stir-fried beef

Lomo Saltado is an example of chifa fusion cuisine. Beef tenderloin is stir-fried over high heat with onions, tomatoes, ají amarillo peppers and soy sauce in a wok.

What makes it unique is the combination of sides: french fries and white rice on the same plate. Soy sauce came with Chinese immigration, while potatoes and ají are Peruvian.
