Kotlet Schabowy - Polish Pork Cutlet

Kotlet schabowy is the most popular dish in Polish cuisine. A pork loin cutlet is pounded thin, coated in flour, egg and breadcrumbs, then fried in butter until golden.

It is served with mashed potatoes and sauerkraut. It is the quintessential Sunday lunch and can be found in every Polish restaurant. It differs from Wiener schnitzel by using pork and being traditionally fried in animal fat.
