Kokkinisto - meat in tomato sauce

Kokkinisto (reddened) is a Greek method of preparing meat braised in tomato sauce. The name comes from the word kokkino (red).

The meat is seared and braised in a sauce of tomatoes, red wine, garlic and spices, especially cinnamon and bay leaf. Cinnamon adds a warm aromatic note. It is served with rice, pasta or bread.
