Khao Soi - Curry Noodle Soup from Northern Thailand

Khao Soi is an iconic soup from northern Thailand, particularly Chiang Mai. The base is a coconut curry with turmeric, in which egg noodles are cooked alongside chicken thighs.

What makes it unique is the combination of two noodle textures - soft boiled noodles and crispy fried noodles on top. It is served with pickled vegetables, shallots and chilli paste. Khao Soi has roots in Burmese and Chinese cuisine.
