Japchae - Korean glass noodles
Japchae are stir-fried glass noodles made from sweet potato starch (dangmyeon) with a translucent appearance. They are tossed with spinach, carrots, mushrooms, meat and sesame oil.
Japchae was a royal court dish from the Joseon dynasty era (17th century). Each ingredient is cooked separately and combined at the end. It is served during Chuseok and Seollal holidays.
