Idli, South Indian steamed cakes

Idli are soft, fluffy steamed cakes that form the foundation of a South Indian breakfast. They are made from batter fermented overnight, a mixture of rice and black lentils urad daal is soaked, ground and left to ferment.

Fermentation gives idli a slightly tangy flavour and airy texture. They are traditionally served with sambar (a spicy lentil soup) and coconut chutney.
