Gyoza - Japanese dumplings

Gyoza are the Japanese version of Chinese jiaozi dumplings. Unlike the original, they are smaller, have thinner wrappers, and are prepared using the yaki technique, pan-fried and then steamed under a lid.

The classic filling contains ground pork, cabbage, scallions, garlic, and ginger. They are served with a dipping sauce made from rice vinegar, soy sauce, and chili oil.
