Gnocchi, Italian potato dumplings

Gnocchi are soft Italian dumplings made from boiled potatoes, flour, and eggs. Properly prepared gnocchi should be light and fluffy, melting on the tongue.

The key is using starchy potatoes and a minimal amount of flour. Gnocchi are done when they float to the surface of boiling water. They are served with sage butter, pesto, or tomato sauce. In Italy there is a tradition of gnocchi Thursday.
