Gemista - Greek stuffed vegetables

Gemista (stuffed) is a beloved summer dish in Greek cuisine. Tomatoes, peppers or courgettes are hollowed out and filled with a mix of rice, tomato pulp and herbs.

They are drizzled with olive oil and baked in the oven. Potato wedges are tucked between the vegetables. Gemista is a vegetarian dish served in summer when vegetables are at their tastiest.
