Gazpacho - cold Andalusian soup

Gazpacho is a traditional cold soup beloved in both Spanish and Portuguese cuisines. It is prepared by blending ripe tomatoes, cucumbers, peppers, garlic, onion, olive oil, and wine vinegar into a smooth consistency.

Originating in Andalusia, the Spanish version is the most well-known. In Portugal, a chunkier variation called gaspacho is popular in the Alentejo region, often served with bread cubes and diced vegetables.
