Gaeng Keow Wan - Thai Green Curry

Gaeng Keow Wan or green curry is the spiciest of all Thai curries, because the green paste is made from fresh green chillies. Coriander and Thai basil add to its vibrant colour.

The curry is cooked in coconut milk with chicken, Thai aubergine and Thai sweet basil. It is seasoned with fish sauce, palm sugar and lime. The result is a creamy, fragrant and fiery dish served with rice.
