Gaeng Daeng - Thai Red Curry

Gaeng Daeng or red curry is one of the most popular Thai dishes. The base is a red curry paste made from dried chillies, lemongrass and galangal, simmered in coconut milk.

Meat is added along with Thai aubergine, bamboo shoots and basil. The result is a creamy dish combining heat, sweetness and the aromatic richness of coconut milk. It is traditionally served with jasmine rice.
