Carp - Czech Christmas Fish

Fried carp is an inseparable part of the Czech Christmas tradition and the main course of the Christmas Eve dinner. Carp fillets are coated in a classic three-layer breading (flour, egg, breadcrumbs) and fried in hot oil to a golden crust. They are served with potato salad. The tradition of selling live carp in tubs on the streets is uniquely Czech and begins several days before Christmas.
