Falafel - Chickpea Fritters

Falafel are deep-fried balls made from soaked raw chickpeas with parsley, coriander, garlic, and cumin. They are golden and crispy on the outside, green and moist on the inside.

In Lebanon they are served in pita bread with hummus, beetroot, tomatoes, and tahini sauce. The key is using raw soaked chickpeas, never cooked ones.
