Espetada - Madeiran beef skewer

Espetada originates from Madeira island. Large chunks of beef are threaded onto a bay laurel stick, which imparts aroma to the meat.

The meat is marinated in garlic, salt and red wine. It is grilled over an open flame and served hanging from a stand so the juices drip onto bread below. On the mainland, variants with chicken or seafood exist.
