Enchiladas - baked Mexican tortillas

Enchiladas are a cornerstone of Mexican cuisine. Corn tortillas are filled with meat or cheese, rolled up and arranged in a dish. Covered with chilli sauce and cheese, they are baked until golden.

Enchiladas verdes use a green tomatillo sauce, enchiladas rojas a red sauce, and enchiladas suizas a creamy sauce. They are served with Mexican sour cream and fresh coriander.
