Emmental - Swiss cheese with holes (Emmental)
Emmental is a Swiss semi-hard to hard cheese with characteristic large holes and a mildly nutty flavor. It originates from the Emme Valley in the canton of Bern. Made from cow's milk and aged for at least four months. The holes are created by propionic acid bacteria producing carbon dioxide during aging.
