Elote - Mexican street corn

Elote is one of the most famous Mexican street foods. A corn cob is grilled over an open flame, slathered with mayonnaise, sprinkled with cotija cheese and chilli powder, and finished with a squeeze of lime.

The name comes from the Nahuatl language spoken by the Aztecs. A version without the cob served in a cup is called esquites. Corn has been cultivated in Mexico for over 7,000 years.
