Eisbein - German pork knuckle

Eisbein is a traditional dish made from pork knuckle. In northern Germany it is boiled, while in the south in Bavaria it is roasted, creating Schweinshaxe with crispy crackling.

It is served with sauerkraut, potato dumplings or mashed potatoes and mustard. It is a signature dish of Bavarian beer halls and Oktoberfest.
