Crème Brûlée, Caramelised Custard Dessert

Crème brûlée is one of the most elegant French desserts. It consists of a smooth egg custard flavoured with real vanilla, baked in a water bath and topped with a thin layer of hard caramel.

Its history dates back to the 17th century, with France, England and Spain all claiming its origin. The key is the right ratio of egg yolks to cream and caramelising the sugar just before serving. Cracking the crust with a spoon is an unmistakable ritual.
