Cream of tartar - a natural kitchen helper

Cream of tartar (potassium bitartrate) is a natural substance formed as a byproduct of winemaking. It forms as crystals on the walls of wine barrels and on bottle corks. In the kitchen, it has several important uses, it stabilizes whipped egg whites, acts as a leavening agent, and helps create smooth royal icing. Combined with baking soda, it forms the basis of homemade baking powder. It is also an important ingredient in candy making.
