Congee (Zhou), Chinese Rice Porridge

Congee, also known as Zhou, is one of the oldest Chinese dishes. This rice porridge is cooked slowly until the grains completely soften and form a creamy consistency. Traditionally served for breakfast, it is also popular in China as a light lunch or dinner.

Congee is seasoned differently by region, in northern China it tends to be thinner, in the south thicker. Popular toppings include preserved eggs, chicken, ginger, and spring onions.
