Chouriço is a Portuguese smoked sausage made from pork seasoned with garlic, paprika and red wine, smoked over oak wood.

It is used in everything from soups to grilling. A popular serving method is in a clay dish, doused with brandy and set alight, grilling it right before the guests. Many regional varieties exist, from sweet to fiery hot.
