Chilaquiles - Mexican breakfast with chips
Chilaquiles are a Mexican breakfast made from leftover tortillas. The tortillas are cut into triangles, fried until crisp and briefly simmered in tomato or green sauce so they soften but retain some texture.
They are served with cheese, cream and coriander, often topped with a fried egg or shredded chicken. Chilaquiles rojas use a red sauce, while verdes use a green tomatillo sauce.
