Ceviche - fresh marinated seafood

Ceviche is a dish in which fresh pieces of fish are marinated in citrus juice. The acid from the lime causes protein denaturation, effectively cooking the meat without the use of heat.

Originating in Peru, where it is considered the national dish, ceviche is equally popular in Mexican cuisine. Peruvian ceviche uses leche de tigre and sweet potato, while Mexican versions often feature tomato and avocado.
