Causa Limeña - Peruvian potato dish

Causa Limeña is an elegant cold dish from Lima. Yellow potatoes mashed with lime, oil and ají amarillo paste are layered with a filling of tuna, chicken or crab salad.

The name comes from the Quechua word kausay (life). It is served chilled with avocado and olives. Peru grows over 3,000 varieties of potatoes.
