Cao lầu - unique noodles from Hoi An

Cao lầu is a unique dish from the city of Hoi An in central Vietnam. Thick chewy noodles are traditionally made from rice flour soaked in water from a local well and lye from ash.

They are served with braised pork, herbs, bean sprouts, and crispy fried croutons. Unlike phở, it comes with only a small amount of broth. It is one of the most unique Vietnamese dishes, reflecting Chinese and Japanese influences.
