Caldeirada is a Portuguese fish stew resembling bouillabaisse. Different types of fish are layered in a pot with potatoes, tomatoes, onions and peppers.

White wine and olive oil are essential. Each coastal region has its own version with local fish. The dish is slowly braised until the flavours meld, and it is served directly from the pot.
