Bún ngan - Vietnamese duck soup
Bún ngan is a Vietnamese soup made from duck meat and broth, popular in Hanoi. The whole duck is simmered, the broth is seasoned with spices, and it is served with thin rice noodles called bún.
The soup is accompanied by sliced duck meat, bamboo shoots, and fresh herbs. It differs from phở with a richer, more unctuous flavour from the duck broth. In Hanoi there are entire streets dedicated to duck dishes.
